Comoros is an island situated in coastal Africa. The island was first discovered by Grande Comore in 1529.It is found in between Madagascar Island and Mozambique.

Traditionally, Comoros is an island of black people that got its mixing stamp from Arab invaders and French colonialists. It also adopts the Islam religion as its identity, a result of Arab domination of the local people.

  • Green plantains (peeled and sliced into sizeable pieces)

Guide to preparing M’tsolola

  • In a large bowl, mix garlic, cloves, chilli, salt, and pepper. Put the mixture in a blender or food processor and grind until you get a thick paste.
  • Add your spinach and continue grinding.
  • In a cooking pot, mix your paste with water, and half of your coconut milk.
  • Simmer and let it cook for 20 minutes.
  • In a saucepan, heat your oil and fry your fish fillets and green plantains.
  • Once the fish fillets and plantains are almost cooked, remove them from the oil and add them to your sauce.
  • Bring the mixture to boil for 7 minutes on medium heat.
  • Stir and taste at this point to make sure the salt and other seasonings are well incorporated.
  • Add the remaining coconut milk and stir gently.
  • Simmer and cook for 5 minutes until you get a thick sauce.
  • Serve while hot with coconut rice.
